- Step 2: Record walk-in cooler and freezer temperatures at the required times
- Step 3: Check reach-in, prep-table, and display refrigeration temperatures
- Step 4: Check required receiving temperatures before accepting temperature-controlled food
- Step 5: Record hot- and cold-holding temperatures required by the food safety plan
- Step 6: Verify cooking temperatures for applicable foods using the approved method
- Step 7: Record cooling and reheating temperatures at required intervals
- Step 8: Clean and sanitize the thermometer between products as required
